I've been eating a Mediterranean diet for more than five years. These are my favorite meals. 

One of my favorite snack items to make in bulk and freeze for hectic workday lunches is vegetable fritters.  

Grate half of an onion and one zucchini into a strainer 

Squeeze off the excess water using a spoon and add a small pinch of salt. 

Add two crushed garlic cloves to a skillet along with diced red, green, and onion peppers

Pour in some chopped tomatoes and season with cumin, paprika, coriander, and red chili flakes. 

Salmon is my go-to meal if I've spent the evening at a spin class or late-night meeting. 

Wrap some fillets in aluminum foil after seasoning them with herbs and garlic
